A Dataset of the Content of 22 Organic Acids in Linden Honey

摘要:

椴树蜂蜜是蜜蜂采集椴树属植物如紫椴(Tilia amurensis Rupr.)、糠椴(Tilia mandshurica Rupr.et Maxim)花蜜酿造而成的蜜,主产于完达山脉、大兴安岭、小兴安岭、长白山脉及俄罗斯远东地区,产量大且营养价值高。有机酸是蜂蜜中的重要营养及活性成分,但目前未见公开发布的较为全面的蜂蜜有机酸成分及含量数据集。本研究采用固相萃取-气相色谱-质谱(SPE-GC-MS)法对分别采集自黑龙江省佳木斯市、虎林市及吉林省白山市的3份椴树蜂蜜样品进行了3组有机酸成分及含量平行检测,形成本数据集。共检测出22种有机酸,平均总含量为644.3 mg/kg,其中葡萄糖酸含量占比最高,其次为L-乳酸和苹果酸。

Abstract:

With the improvement of people's living standard, the demand for by-products such as honey has increased, and there is increasing concern about honey quality and nutritional composition. The chemical composition of honey may be different when bees collect nectar from different plants. Organic acids are important nutritional and active ingredient in honey. However, there is no study with comprehensive methods for detecting the organic acid composition and content in honey. Linden honey is the honey brewed by bees from the flower nectar of linden plants (such as Tilia amurensis Rupr., Tilia mandshurica Rupr.et Maxim.). It is mainly produced in Wanda Mountains, Greater Khingan Mountains (Daxinganling), Lesser Khingan Mountains(Xiaoxinganling), Changbai Mountains and the Russian Far East, with high output and great nutritional value. It is therefore necessary to establish a dataset for the distribution of organic acid content in linden honey. In this study, we used SPE-GC-MS to detect 22 organic acids in linden honey collected from Heilongjiang Province and Jilin Province, with an average total content of 644.3 mg/kg, in which the content of gluconic acid accounted for the largest percentage, followed by L-lactic acid and malic acid.
